Why do we pair red wine with red meat?

We all heard the saying, red wine should be paired with red meat. It is a simplistic and easy way to remember how to pick a wine that will likely be a good match for your meal.

However, the main reason why it works so well is more about the salt on your meat than the meat itself. Salt enhances body in wine whilst decreasing the perception of bitterness and acidity.
There is some truth to the saying too as the texture, flavours and intensity of red meat and red wine are complementary.

The tannins in red wine are complemented by the salt but also the fattiness of red meat. Tannins will appear smoother, and the fatty meat helps reduce the astringency.

One important factor to a successful pairing is also a quality, balanced and ready to drink red wine. For example, too much alcohol (anything above 14%) is likely to detract from the flavours of meat, even with a punchy sauce and generous seasoning.

What’s needed is an opulent but elegant body in the wine, lots of fruitiness and supple tannins. A young, peppery Shiraz or Cabernet Sauvignon can be a good choice of course but a medium to full-bodied Merlot or Pinot Noir from a few vintages ago, can sometimes be even better.

Although there are some basic rules to wine and food pairing, we can also say “drink what you like and eat what you like” so the bottom line is, always pick a wine that you’ll enjoy!

What a wine colour tells you about its taste

The appearance of a wine is the first thing that we look into when assessing it. Everything from the thickness of a grape skin to weather conditions and the winemaking techniques used in a practical wine region, influence the colour of a wine. As a rule of thumb, the deeper the colour, the more body your wine will have. Think Pinot Noir vs Syrah or Chardonnay vs Sauvignon Blanc. The level of extraction of tannins and therefore colour also varies and is usually influence by the climate and the amount of sun the gapes will receive.
For example, a Pinot Noir from Australia will be much deeper in colour than a Burgundy.

To add complexity to it, the colour of a red or white wine will also change with the ageing process, which impacts its taste over time. However, we want to make it easier for you to assess the next wine you try:

When it comes to reds, the wine can range from purple, ruby garnet to tawny. A purple or ruby wine usually indicates a young wine which is younger, fresh and fruity. When it ages, a red wine will change in colour, becomes a bit lighter and takes on brown, orange hues due to oxidation. The flavour intensity will also soften over time, along with acidity. These brown tinges tell you that the wine has been aged, and might be more complex, savoury due to ageing. A tawny wine although very sweet, gives you a good idea of what colour to expect from an aged red wine.

White wines, as opposed to reds, will darken as they age. The colour intensity can also give you some information about the style and sweetness. Pale lemon wines sometimes with green hues are usually young, crisp and light-bodied wines. Ageing and oxidation in the wine will turn it into more golden in colour. They will also typically be lower in acidity, less crisp and smoother. A Sauternes gives you an idea of what colour to expect from an aged white wine.

So when you next have a nice vino, have a look at the colour and see if what you can guess on the age, style and flavours!

2022 Vintage is coming 🍷

Every year, winemakers go through the process of harvesting grapes when they’re perfectly ripe. They consider the ripeness but also the level of sugar, acid and tannin. Picking time is critical for the winemakers as it can have a tremendous impact on the resulting wine. It can be a matter of days and is often influenced by the weather forecasts as conditions need to be perfect for this intensive process. Once picked, grapes are sorted, often destemmed before going through various techniques to turn them into delicious wine. This whole process is what will give the new Vintage wine.

So what is a Vintage wine?

A vintage wine is made from at least 85% (May differ depending on countries regulations) of grapes that are picked in the same year. When the year appear on the label, it is considered a « Vintage wine ». Often, and especially for Champagne and more generally sparkling wines, winemakers will blend grapes from different years for consistency and balance. These wines are referred to as « non-vintage », no year will appear on the label but NV can be read.

Happy Wednesday Pairing 🍷 Charred Octopus & Chianti

Like most fish and seafood, Octopus on its own has quite mild flavours. It’s only when cooked or combined with condiments that it becomes very interesting for wine pairing. Depending on the condiments and the way it is cooked, the flavours might be more suitable for a crisp white wine or a bold red wine.

The smoky flavours of charred octopus makes it a very versatile and interesting dish to pairing with wine. It allows for a bolder wine and perfectly complement the oak flavours in red wine. However, as Octopus is quite lean, we recommend wines with low tannins and a firm acidity.

With its bright acidity, red fruit notes, and hints of charred wood driven from the oak, Chianti Classico (Sangiovese grape) is a perfect match to your charred Octopus dish.

Today’s focus is on Koerner Wine 🍷

Koerner Wine was established in 2014 with the intent to make unique wines from the Clare Valley.

Although famous for its Riesling, the small Clare Valley region and its grape varietals are gaining in popularity and quality with countless of international award wins. The higher altitude, compared to other wine regions in South Australia, allows the fruit to ripen more evenly and slowly.

The Koerner brothers, Damon and Jono, Winners of the 2019 Young Gun of Wine award, bring the classic wine styles of the Clare Valley and Adelaide Hills into the modern day. With a great attention fruit quality and honest winemaking, picking fruit early to retain freshness and acidity and taking a minimal intervention approach to the winemaking.

The Clare 19 is classic Bordeaux blend with a modern twist. Blend of Cabernet Sauvignon, Petit Verdot, Malbec, Cabernet Franc and Grenache. It is powerful and fruity. The brothers describe the wine as being in a "Loire style", so expect lots of freshness and red fruit rather than oak and spice.

It’s delicious with a charcuterie board or creamy cheese, the salt and creaminess balancing the body, fruitiness and acidity in the wine.

If you are a red wine lover looking to cool down this summer, we have a great cocktail alternative to Sangria for you. This wine version of the popular El Diablo cocktail is refreshing and add just the right amount of sweetness to be the perfect match for a cheese platter and savoury nibbles.

For 1 serve:

- 50ml of your preferred red wine (Pinot Noir or Grenache are our favourite)
- 50ml of Crème Cassis or liquor
- 80ml of Ginger Beer

Garnish with fresh berries, fresh mint and ice! 🍷

Our go-to sparkling wine for the end of year celebrations 🥂

Fraser Woods is a family owned Margaret River winery, specialising in sparkling winemaking. The La Cache range is crafted with minimal intervention, using their own vines and local handpicked grapes.

The method champenoise, used to make traditional champagne wines is usually described as difficult, expensive and time consuming. Fraser Woods has proven to have successfully mastered this complex process since 1996. This is when the first vine was planted at their Wilyabrup winery and 2 years later, the first wine was produced. The boutique winery has been offering an excellent value range of vintage and non-vintage sparklings ever since.

The particularity of their wines is the naturally occurring ferments combined with an extended ageing period of time on the lees which gives its signature bread, brioche characters to the wine. The 2013 Pinot Noir Chardonnay vintage has developed those complex notes while retaining incredibly fresh citrus and stone fruit notes and a noticeable, pleasant acidity. Incredibly fine bubbles and an enhanced creamy texture guarantee a great food pairing experience. At Christmas it is perfect with salmon, prawn and even better with dessert.

With New Year’s around the corner, we highly recommend to grab a few if you can!

Today’s focus is on Pomerol 🍷

Pomerol is the smallest of all the major Bordeaux wine-producing appellations, yet it is home to some of the most expensive and notorious wines.

Although it doesn’t have a classification system like the other prestigious Bordeaux wine regions, it has managed to earn itself a place among the world’s most sought-after wines.
The terroir in the Pomerol region has a lot to do with its reputation and the quality wines produced, with cooler soils allowing Merlot to ripen perfectly and develop its signature flavours.

Often compared to St Emilion wines, Pomerols are usually more velvety and rich and spicy. Its wines are Merlot dominant red blends with a robust blackberry character and some almost meaty notes. Cabernet Franc is also often present, adding structure and savory spice to it. The resulting wines are usually very fine, opulent wines.

Pairing Pomerol wine with food:
Pomerol goes exceptionally well with braised, roasted, or grilled red meat as well as roasted chickens, mushrooms and earthy dishes.
