Cabernet Sauvignon often shorten to ‘Cab Sav’ is originated from France which remains the main producer in the world today. It’s one of the most planted and consumed grapes in the world and comes in some very different styles depending on the origin.
Cabernet Sauvignon is a big and bold red wine which signature aromas and flavours often highlighted are Eucalyptus and blackberry. Its thick skin gives the wine a rich colour and some solid drying tannins that act as a natural preservative, its general structure makes it a wine with great aging potential. The use of oak in addition to bottle aging help soften the tannins, transforming cab sav texture, into a silkier and more balanced wine on the palate.
Sometimes blended with other grape varieties, Cabernet provides brilliant foundation against more delicate varietals like Merlot which is a very popular blend from the Bordeaux region in France.
Our pairing tips: Cabernet Sauvignon has a great structure with a full body which makes it a perfect match to richer food such as fatty red meat, strong cheese and rich flavoured sauces.
